Should we only apply for work experience if we will definitely accept if we get in, or can we apply to many different places and choose out of the ones we get into?

Hi Ailbhe, you can apply for many work experience placements. In fact this is a good idea as it’s good to have a backup plan just in case. You should apply for the placement you want the most first.
